Sarchimor is a relatively new varietal introduced to coffee farmers in Yunnan in recent years. Originally developed at a Portuguese coffee research institute, it is a hybrid of Villa Sarchi from Costa Rica and Timor Hybrid. It shows another deliberate effort by plant breeders to combat leaf rust. Known for its impressive resistance to the disease, Sarchimor was introduced to Yunnan as a promising contender for future cultivation.

While some newer varietals have struggled to settle into Yunnan’s unique terroir, Sarchimor has so far shown remarkable adaptability. It not only thrives in the region’s terroir but also expresses its own flavour profile shaped and nourished by Yunnan’s landscape.

This washed Sarchimor comes from Tian Yu Coffee Co-op. As the earliest producers to adopt and cultivate this varietal, Ye Ping and her husband have invested tremendous care and dedication into developing what they believe could become one of Yunnan’s most widely planted coffees in the years ahead.

In the cup, this Sarchimor stands in striking contrast to the Catimor widely grown across Yunnan. Processed with a traditional washed method, it highlights the varietal’s bright, articulate acidity and clean structure. Expect vibrant notes reminiscent of tamarind and pomegranate, lifted by a gentle herbal fragrance with hints of rosemary.
